Introduction: What Is Jigarthanda?

If you’ve ever roamed the hot streets of Madurai, you’ve probably heard the name Jigarthanda echoing from roadside stalls. A drink that literally means “cooling the heart”, Jigarthanda is the South Indian answer to summer heat—creamy, rich, and ice-cold.


Origin Story: Born in Madurai, Loved Everywhere

Jigarthanda is said to have originated in Madurai during the 1940s, influenced by Mughal-style drinks but adapted to local tastes. While North India has its falooda, Madurai made its own cooler—with a Southern twist!

Today, it’s a cultural icon—so much so that there’s even a Tamil movie named after it.


What’s in a Glass of Jigarthanda?

A single glass contains layers of cooling ingredients:

  1. Nannari Syrup – Herbal root syrup that aids digestion and cools the body

  2. Badam Pisin (Almond gum) – A natural jelly-like resin from the almond tree, soaked overnight

  3. Thick Milk – Reduced milk for creaminess

  4. Homemade Ice Cream (or Khoya-based Cream) – Not your usual vanilla; this is local and rich

  5. Crushed Ice – To chill it all down

Optional Add-ons: Rose essence, khoya mix, or even condensed milk depending on the shop!


How to Make Jigarthanda at Home – Recipe

Ingredients:

  • 2 tbsp Nannari syrup

  • 1 tbsp soaked badam pisin

  • 1 cup boiled and chilled full-fat milk

  • 1 scoop homemade/vanilla ice cream

  • Crushed ice

Instructions:

  1. Soak badam pisin overnight—it will bloom into a soft jelly.

  2. In a tall glass, first add Nannari syrup.

  3. Layer with badam pisin.

  4. Add chilled milk and stir gently.

  5. Top with crushed ice and a scoop of ice cream.

  6. Serve immediately!
