The Classic Masala Dosa – A Perfect Start

 


Introduction:
Masala dosa is the king of all dosas. Thin, crispy, and filled with spicy potato masala, it’s not just food—it's comfort on a plate.

Ingredients for Batter:

  • 3 cups rice

  • 1 cup urad dal

  • 1 tsp fenugreek seeds

  • Salt to taste

  • Water for soaking and grinding

Method:

  1. Soak rice, dal, and fenugreek seeds separately for 5-6 hours.

  2. Grind them into a smooth batter and ferment overnight.

  3. Add salt and water to adjust consistency.

Potato Masala Filling:

  • 3 boiled potatoes, mashed

  • 1 onion, sliced

  • 2 green chilies, chopped

  • 1 tsp mustard seeds

  • Curry leaves

  • Turmeric, salt

  • Oil for tempering

Tempering & Filling:

  1. Heat oil, add mustard seeds, curry leaves, and onions.

  2. Add green chilies, turmeric, and mashed potatoes.

  3. Cook and mash till smooth. Keep aside.

Making the Dosa:

  1. Heat a dosa tawa, pour a ladle of batter, and spread thin.

  2. Drizzle oil/ghee, let it crisp.

  3. Place a scoop of potato masala in the center.

  4. Fold and serve with chutney and sambar!

Pro Tip: Use a cast iron tawa for hotel-style crispiness.
